Quinoa, Almond, Flax Bread

This bread is gluten free, grain free, yeast free, and still delicious. I’ve been on the hunt for a bread at the store that fits this criteria, isn’t expensive, doesn’t have a long list of weird ingredients, and still tastes good, but I haven’t found one yet so I created this one! This one is really simple to make and is super versatile to whatever you put on it. With whole, real ingredients, this bread does good for your body and taste buds.

Ingredients:

1 cup almond flour

1 cup quinoa flour

1/4 cup ground flaxseed

2 Tb arrowroot

2 tsp coconut flour

1/2 tsp baking soda

1/4 tsp salt

5 eggs (also works with 4 eggs + 1 chia egg (1 Tb chia seeds with 3 Tb water))

1 Tb extra virgin olive oil

1 Tb apple cider vinegar

Directions: 

Preheat oven to 350 degrees. In a large mixing bowl combine flours, flaxseed, arrowroot, baking soda, salt. Add eggs, olive oil, and apple cider vinegar, and stir to combine. Place in a well-greased, parchment lined loaf pan and bake for 25-30 minutes until a toothpick inserted comes out clean. Let it cool in loaf pan for 30 minutes before inverting to a rack to let cool completely before slicing.
