Toast with Heirloom Tomato, Peach, and Avocado Herb Pesto

This toast with pretty much summer in a bite. Fresh, juicy, ripe heirloom tomato from my garden and peach from the farmers market all nestled with bright and creamy avocado herb pesto is not a bad way to dress up toast. This avocado pesto can be used for just about anything. I love it with fresh, crunchy cucumbers, radish, or carrots for a quick snack.

Avocado Herb Pesto:

1 small bunch of cilantro

1 small bunch of basil

1/2 a medium-large avocado

1 lime, juiced

1 tsp freshly grated ginger

1 small garlic clove

1 Tb extra virgin olive oil

small splash of apple cider vinegar

salt and pepper

Directions:

Add ingredients to a blender and blend away until smooth and creamy!

To make toast, simply toast your favorite bread, slather it with the avocado herb pesto, top with fresh slices of peach and tomato, add another sprinkle of salt and pepper. Highly recommended to enjoy outside on a sunny day.
